Food & Beverage Cost Controller

Responsibilities

• Controls and records the flow of goods between Food and Beverage outlets and issues from stores to user departments
• Checks receiving vouchers against supplier invoices and purchase orders for accuracy
• Ensures supplier tax invoices are compliant with FTA guidelines
• Produces daily food flash cost of sales reports
• Ensures food and beverage stock counts are performed per company policy
• Costs all recipes before implementing new menu items to ensure correct pricing
• Analyzes monthly sales statistics and highlights slow-moving items to department heads
• Analyzes outlet activity including revenue, cost of sales, and productivity
• Prepares month-end closing reports for food, beverage, tobacco, general stock, and operating supplies
• Oversees management of hotel stores and ensures stockholding aligns with business levels
• Conducts adhoc analysis and restaurant spot checks

Requirements

• Previous experience in F&B cost control, financial reporting, or accounting within hospitality
• Strong numerical and analytical skills with attention to detail
• Knowledge of budgeting, variance analysis, and inventory valuation methods
• Proficient in Excel and comfortable using accounting or hotel property management systems
• Effective communication skills to present financial information to non-financial colleagues
• Organized and able to prioritize workload in a fast-paced environment
• Problem-solving mindset

Preferred Qualifications

• Finance-related tertiary qualification
• Experience or training in inventory control, stocktaking, and cost accounting
• Experience with Sun Systems or other finance systems
