About the Company

On schedule to open in the United Arab Emirates in Spring 2027, Wynn Al Marjan Island has been created as an opulent and entertaining beachside destination for discerning guests to play and relax. This integrated resort offering 1,530 rooms and suites, 22 restaurants and lounges, a theater, nightclub, and five-star spa is located on a picturesque island in the Arabian Gulf.

Responsibilities

• Lead all aspects of restaurant operations, including service, culinary, people, and financial performance
• Ensure flawless execution of service standards, guest engagement, and brand positioning
• Drive top-line revenue while controlling costs, labour productivity, and maximizing profitability
• Lead, coach, and develop department heads and team members to build a performance-driven culture
• Collaborate with culinary and bar leaders on menu development and promotions
• Analyse guest feedback, operational KPIs, and financial metrics to drive continuous improvement
• Ensure full compliance with health, safety, licensing, and hygiene regulations
• Provide personalized service to VIP guests and regular patrons

Requirements

• 3-4 years of experience in a similar position in fine dining
• Experience in restaurants with 2 star or 3-4 hat Gault Millau status preferred
• Excellent product knowledge of fine dining cuisine and budgeting
• Secondary school diploma or above; bachelor's degree in hospitality management preferred
• WSET 2 certification
• Proficiency in MS Office and POS software
• International experience in major global culinary hubs is a great advantage
• Sommelier certification is an advantage
