Sous Chef

Responsibilities

• Support the Head Chef in managing all daily kitchen operations and food production
• Ensure consistency of recipes, quality, plating and presentation across the entire menu
• Supervise, train, mentor and schedule chefs de partie, commis and kitchen staff
• Manage food costs, ordering, portion control, stock rotation and wastage
• Lead service on the pass, expediting orders and maintaining ticket times
• Contribute to menu development, seasonal specials and event menus
• Ensure full compliance with HACCP, Dubai Municipality food safety and hygiene standards

Requirements

• Minimum 3 years' experience as a Sous Chef in premium restaurants, beach clubs, hotels or lifestyle venues
• Strong culinary skills across multiple cuisines with excellent plating and consistency
• Proven leadership, training and kitchen-management experience with large brigades
• Solid knowledge of HACCP and UAE food safety regulations; certification preferred
• Good commercial understanding of food costing, ordering and inventory
• Ability to perform under pressure in a high-volume, fast-paced kitchen
• UAE experience preferred; flexibility to work shifts, weekends and public holidays
