Job description
Responsibilities
- Prepare doughs, batters, creams, custards, sauces, and fillings to recipe specifications.
- Weigh, portion, label, and store prepared items; maintain accurate rotation and FIFO practices.
- Finish and plate desserts during service following standardized presentation guides.
- Ensure temperature, texture, and portion consistency before service.
- Perform basic laminations, temper chocolate, assemble mousses, and execute simple sugar or glaze work as required.
- Monitor bake times and temperatures; adjust under supervision to maintain quality.
- Keep the pastry station organized and service-ready; follow cleaning schedules and equipment checklists.
- Maintain tools and small equipment hygiene; report faults promptly.
- Adhere strictly to HACCP and local food safety procedures; enforce allergen controls and prevent cross-contamination.
- Conduct temperature checks and ensure correct labeling and storage of ingredients.
- Support and learn from pastry CDP and DCDP; assist in training commis pastry staff.
- Participate in briefings, tastings, and calibration sessions; implement feedback to improve consistency.
Requirements
- 1–3 years pastry or bakery experience preferred; culinary or pastry diploma advantageous.
- Basic competence in doughs, creams, custards, portioning, and plated dessert finishing.
- HACCP or equivalent awareness preferred; strict adherence to hygiene and allergen procedures.
- Familiarity with portion control, stock rotation, and basic inventory practices.
- Detail-oriented, reliable, punctual, physically fit, calm under pressure, and coachable.
- Local resident eligible to work in the UAE; flexible availability including weekends and public holidays.
